He worked his way through college as a waiter in the Wine Room at Commander's Palace Restaurant. He was later sommellier at La Provence Restaurant for 11 years. He owned his own wine shop for four years as well as writing wine columns for two magazines. He also taught the Wines of the World course at the University of New Orleans Northshore Campus.
